So as you all know that the frosting of lemon meringue is pure egg white with sugar, so how do you make a vegan lemon meringue??well first of all you need to think of how to replace the egg white. What I found from internet was the chickpea liquid, basically it’s the liquid after you cooked chickpeas…. will it actually work??I’m not sure, so I used a can of chickpea liquid and add sugar and lemon juice in the mixer and just beat it…………for like 15 minutes. Oh gosh it actually worked. But when I taste it, it’s a bit weird, I mean it taste like chickpea you know,plus a hint of lemon,but I think for vegan lemon meringue that probably is your best chance.
Now we talk about this vegan lemon curd. To be honest I didn’t know you need to add egg and milk to make lemon curd so I assumed all lemon curds in the supermarket are vegan, but it’s not………….so we need to make our own, which isn’t hard, just add lemon juice, sugar, vegan gelatin, coconut milk.
So here we go the ‘Vegan Lemon Meringue Cupcakes’! Nailed it! (taste like chickpea…)
